Have you experienced craving for a specific food but you do not have it available right away and no matter what you eat to satisfy your craving it’s not enough?
Well, few days ago I was craving for Miso soup. It seldom happen that I crave for soup. Usually it’s sweets like chocolate cake, ice cream or any sweet bread and this is the reason why I don’t have ready ingredient (for Miso soup) at home. I tried to have canned soup but the craving persisted so I asked my husband to go to an Asian store to buy the ingredients. All I know is I want Miso soup but I do not have any particulars in mind. So I grabbed whatever ingredients my instinct told me, went home and prepared the soup right away.
My apologies I forgot to take photos of the ingredients, but you will need:
Vegetable broth, leek, Shitake mushrooms, onion, green onion, bean sprouts slice of lemon, wasabi and Nori seasoning, salt to taste.
How to prepare the soup:
Boil 2-3 cups of vegetable broth, add Shitake mushrooms then the leek, add 2 tablespoons of Miso once the mushrooms and leek are cooked then salt.
I added the bean sprouts before serving.
It has been my experience that when you prepare your food in a presentable way, you appreciate it more plus it will be picture ready 😄.

Note:
Leeks are rich in flavonoids which are anti-oxidants and may have anti-inflammatory, antibiotic and anti-cancer properties.
Shitake mushrooms have properties that are good for your immune system.
