Chicken Stew in Dried Herbs

I always hear or read herb incorporated be it in food supplements, drinks (alcoholic or not) and even in cosmetics so I said to myself, why not cook something and use all the dried herbs I can find in the pantry and so I did and came up with this recipe. We always have chicken thighs in the freezer because our dear Coco loves this part of the chicken and so what meat to cook with different dried herb was an easy decision.

Ingredients:

4 pieces of chicken thigh

Fresh garlic and onion

Olive oil

chicken broth

Soy sauce

Bell pepper of any color

Potatoes

Dried Oregano

Dried Basil

Dried Rosemary

Dried Parsley

Bay leaf

Lemon and Feta Cheese

I will show how I cooked it through these photos:

I sautéed the pre-seasoned chicken in fresh garlic and onion, added a little chicken broth then the bay leaf and potato afterwards.

I flipped each thigh until I saw it’s a little brownish then I added a little soy sauce then the yellow, orange and red bell pepper.

After adding the soy sauce and bell peppers, I sprinkled dried rosemary, basil, oregano and parsley then I allowed it to stew.
This is how it looks after allowing it to stew for few minutes.

Finally, I added the lemon on top and allowed it to simmer for a couple more minutes to let the lemon give the chicken a lemony taste.

I garnished it with dried parsley and Feta Cheese to add to the umami taste.

My husband said it was surprisingly delicious because it was his first time to have this, not sure if he was telling the truth or not. 😄
