Refreshing Turkish Salad

I don’t know about you but in our household, thinking about what we will have for dinner seems to be a tough task 😄. So tonight we were discussing what we will have for dinner and as usual we had a hard time to decide as to what we will cook so we decided to have steak and mashed potato (rice for me) and salad. I told my husband I am getting tired of the usual green salad we normally prepare with steak so he started browsing online and he found this very refreshing salad.

Ingredients:

  • chopped tomatoes (we used cherry tomatoes)
  • Chopped cucumber
  • 2 chopped green bell pepper
  • I big diced onion
  • Parsley (I prefer flat)
  • 2 teaspoon Sumac (lemon pepper if not available)
  • olives for garnishing (we used black)

Dressing:

  • 1 lemon
  • 1 tablespoon vinegar (we used apple cider)
  • 2 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon pomegranate molasses (we used a little honey but this is optional)
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
Note: The strawberries are not part of the salad.

This is so good and refreshing! Actually we prepared a lot that we had left-over and so I put it in the fridge and it was even better the following day. I guess it’s because the dressing was absorbed by the ingredients. Highly recommended! ☺️👌
