My husband is so sweet and thoughtful that he learned how to cook and of course eat 😁 Filipino Food. He wanted to make sure that I will not be homesick being away from my country of birth and it’s delicious food. I will share with you today one of the Filipino dishes that I love to eat and he learned to cook, Pinakbet. I called it Pinakbet Ala LeRoy because he prepared and cooked it so quickly, military (veteran that he is) style. 😄
Ingredients:
- Calabasa/squash
- Ampalaya/bitter gourd
- Talong/eggplant
- Sitaw/stringbeans or long beans
- Okra
- Tomatoes
- Onion
- Garlic
- Cooking oil of your choice
- Shrimp paste to taste


He prepared all ingredients. He even mixed the garlic and onion. Isn’t he organized? 😁

He sautéed them, adding the bitter gourd first and I did not ask him of his reason. Maybe because it’s bitter and he thought of paying more attention to it. He added shrimp paste next then all the vegetables.


He finished cooking the dish quickly, was even able to grill Tilapia (rectangular plate) and Salmon (bowl) and it actually tasted delicious. Salute to him 🫡!
