Mexican Street Corn

We lived in Texas for many years and my husband was born and raised in Texas and so he’s used to eating Mexican food and I love Mexican cuisine! It’s really there that you will have the taste of authentic Mexican cuisine. Today, he’s craving for something easy to prepare with the Mexican taste so he started to watch videos and he came across this recipe. I thought I’d share it with you if you’re looking for something delicious and easy to prepare. 😉

Here are the ingredients:

We used fresh corn that grated from the husk (you can use canned though)

2 tablespoons butter

kosher salt or any salt available in your kitchen

3 tablespoons Mayonnaise, brand of your choice

1-2 tablespoons lime juice

2 teaspoons chili powder, brand of your choice

Cotija cheese, amount depending to your preference

Cilantro, roughly chopped (I prefer no cilantro though)

How to prepare:

First, heat the skillet on high heat and add the corn.

Cook it for about 8-10 minutes, don’t forget to stir occasionally to ,make sure it does not stick to the pan. Best to use non-stick pan.

Remove from skillet from stove, add in butter and salt. Stir until mixed.

Add in Mayo and lime juice.

Add 1 teaspoon chili powder and mix well.

Sprinkle with Cojita cheese, more chili powder, and chopped cilantro.

Serve immediately and enjoy.
