I’m not sure what is the weather where you are at but here, it is getting colder and colder and it is during cold weather that most of us crave for comfort food. Our go-to comfort food and when I say “Our” I mean my husband and I, is Arroz Caldo, a Filipino rice porridge casserole rice and chicken gruel heavily infused with ginger and garnished with toasted garlic, scallions, and black pepper. But of course when we cook any recipe, we always put a twist to it. So what we did is follow the recipe from what I remember back when I was a child plus whatever my husband thought of adding 😁.
This recipe seems to be a lot of work but once you prepared all you need, it will be easy. So here we go.

How we prepared it, we lightly fried the chicken wings and thigh then once done, we sautéed garlic, ginger and shallots and put the lightly fried chicken wings and thighs back. We sort of sautéed the chicken wings so it will absorb the taste then added a cup of washed regular rice and a cup of washed glutinous rice. I like it a little soupy so we added more water, at least enough to submerge the chicken. Let it simmer until it’s cooked.
